When I bought this cooking book: The Best of Chef Wan Taste of Malaysia, stir-fried ladies fingers with mince beef was the first recipe I tried and remain to this date as one of my favourite dish. It taste good and so simple to prepare. I will normally just cook this one dish to be eaten with white/brown rice.
The Ingredients
Vegetable oil 4 Tbsp
Minced beef 250g (9 oz)
Ladies fingers (okra) 300 g (10 1/2 oz), stemmed and thickly sliced
Red capsicum (bell pepper) 1, cored and sliced
Light soy sauce 2 Tbsp
Sugar 1 tsp
Spice Paste
Red Chilies 6, seeded (I like spicy food so sometimes I add cili api as well)
Dried prawn (shrimp) paste (BELACAN!!) 2 tsp
Garlic 4 cloves,peeled
Shallots 6, peeled
How to cook?
Combine ingredients for spice paste in a food processor and blend until smooth.
Heat the oil and saute the spice paste until fragrant. Add the beef and saute until it changes colour.
Add the ladies fingers and capsicum and season with soy sauce and sugar. Stir-fry until vegetables are tender. Serve warm.
Do ignore the uneven cuts of the veggies. This yummy dish normally takes me only half hour max to prepare.
